Food on a stick, over fire; be your own food truck!
- Wooden skewers are cheap and widely available in either round or flat shapes. Soak in water for 30 minutes so they don’t ignite while grilling.
- In a bowl combine olive oil, lime juice and shrimp, toss to coat. Let marinade in the refrigerator for 2 hours.
Preheat the grill to medium-high heat.
Thread shrimp evenly onto 4 skewers. Sprinkle shrimp with salt and pepper. Grill shrimp 1 1/2 minutes on each side or until done.
